Dessert : Custard Squares

Custard Squares
* 1 cup (125g) all-purpose flour (or 1:1 GF blend)
* ¼ cup (30g) powdered sugar
* ½ cup (1 stick / 115g) cold unsalted butter, cubed
* Dairy & Eggs

For the Vanilla Custard Filling:
* 3 large eggs
* ¾ cup (150g) granulated sugar
* 2 tbsp all-purpose flour (or cornstarch for GF)
* ½ cup (120ml) whole milk
* 2 tbsp unsalted butter, melted
* 2 tsp pure vanilla extract
* Pinch of salt

For Finishing:
* Powdered sugar, for dusting

💡 Pro Tips:Press crust firmly—prevents crumbling when cut.Don’t overbake custard—edges should be set, center slightly jiggly.Cool completely before slicing—custard firms as it chills.

1. Make the Crust
* Preheat oven to 350°F (175°C). Line an 8x8 pan with parchment paper.
* In a food processor or bowl, mix flour, powdered sugar, and cold butter until crumbly.
* Press mixture firmly into bottom of pan.
* Bake 15–18 minutes until lightly golden. Cool slightly.
* Food

2. Make the Custard
* In a bowl, whisk eggs and sugar until pale.
* Whisk in flour, milk, melted butter, vanilla, and salt until smooth.

3. Assemble & Bake
* Pour custard over warm crust.
* Bake 20–25 minutes, until edges are set and center is just slightly wobbly.
* Cool completely in pan on a wire rack (about 2 hours).

4. Serve
* Lift out using parchment; dust with powdered sugar.
* Cut into 16 squares.

25. When was the last time the windows in your home were washed?

We're terrible. We only do our windows up once for spring and once for fall. Inside and out. I'm anxious to read if people do their windows more than twice a year. I know my sister washes her windows once a month. As much as I'd like to see mine look good every month, I just don't want to do it. Are we lazy? Why yes, we are.

Things I Need vs. Things I Want

My main bathroom. Needs to be redone. I would like to have it done, but we're going to do it ourselves. We need a new shower enclosure, all new matte black sink and faucets, and all new matte black shower faucets. Black towel racks, new countertop. Either quartz or ceramic. Then we'll sand down the bathroom vanity and paint it. Next are the new mirrors and wall lights. Followed by a black and glass medicine cabinet. We already have the new toilet. Then lastly, we will be painting the room. It's going to look brand new. We're going to start in April with the big things. We already have new flooring and accent rugs, too. These are all things I want, but do we need them? Why, yes, we do. When you own a home you have to put money into it from time to time. Next summer (2027) were going to sand all the kitchen cupboards and paint them dark grey. My kitchen is done in reds. Again were going to do all the work, so, it'll be affordable for us. I think there is a fine line between need and want.

In a small town in upstate New York, Harper lives a completely mundane existence. After years trying to get an artistic career off the ground, she’s retreated to her tiny hometown, working minimum wage jobs and trying to ignore her chronic pain. All her days are exactly the same–wake up, have a cup of instant coffee, go to work, go home, have a microwave meal, watch TV, go to sleep. With the exception of her girlfriend–the one bright spot in Harper’s life–existence is tedious and never-ending.

And then, on her thirty-sixth birthday, a demon possesses Harper. So. Not so mundane after all.

TWO THOUSAND AND LATE is the story of a demon from hell sent to bring along the apocalypse. Only, when they arrive, they find that the end of the world isn’t as straightforward as they thought. But that doesn’t mean they can’t still sow a little chaos–the human they were assigned to is incredibly ordinary, but has more rock bottom to find.


This podcast is a riot. It's full of peak millennial humour and post-capitalist feels in the vein of Bubble. It's satire in the most blunt in-your-face way, but in a good way? Heaps of fun. The ending of Episode 5 is the most fun I've had with a podcast in ages. I don't want to say too much more and spoil the story, but this is definitely a recommend if you like dark humour and wild rides.

The audio is very fast though, especially Havoc. For the first time I've used the speed controls in my podcast player and that was to slow the episodes down.

I haven't done a proper News & Views in several weeks so here goes.

1. We got a couple of inches of snow Sunday night. I was terrified Monday morning but I made it to jazz man in one piece and it melted enough for me to take Indian lady to physical therapy. Also, in the middle of making myself sick about whether I was going to survive my commute, my body decided it would be a great time to start menstruating. WHAT?!

2. On the heels of [personal profile] spikedluv's death, one of the members of my meditation circle died on Friday. She had had several rounds of chemo AND remission over the years but two weeks ago went into the hospital with severe dehydration (c-diff) and never rallied. She had a tremendous amount of energy (she was 70) and 5 young grandchildren. An amazing person.

So I am feeling my mortality. Nobody knows how much time we have, do we? I feel more urgency about some things. I want to see BTS perform in August and I want to get to 221B Baker Street as soon as I can. Also, given my work (home care for the elderly) I am sensitive to quality of life and what that means to me.

3. Speaking of quality of life, I signed up for another weight loss program (not Weight Watchers, which I've tried THREE times and not Noom, which I did once). I am not going to describe it, because I just started like 20 minutes ago but it isn't a drug (and a British lady runs it so I like her voice, this is important to me). No judgement, but those drugs scare me. We'll see how it goes.

4. Annoying things. Air force guy's family didn't cancel my session today so I drove out there suspecting they'd gone to chemo...and I was right. The door was locked. And granddaughter told me to go home. Then I talked to my sister and she insisted on mis-using pronouns for someone in a story she was telling, finally tell me (after I corrected her five times) that 'they' was plural and to use it singularly was arrogant. The co-worker my sister was talking about went MISSING. Sheesh.

5. Boys are switching from winter sports to spring sports this week and next. Winter running to track and indoor soccer to outdoor soccer. Let's hope Mother Nature cooperates.

6. I got to run outside today at the lake because of cancelled session. Yay. Now I am headed to my Alzheimer lady.

I have known for a long time I am missing the gene (or synapses) that allows me to connect with pets but I do love animals (and wish them the best, wherever they are). And I love this series: how about frog making a valentine for toady?

Help me pick my next* build! (*Well, I have the Destiny Astray to finish, whatever I'm making for 30ML Day, the other contest, and possibly some other small decompression builds. Which is fine, it means I can leave this poll open for a bit.)

These kits are all not Gundams, nor are they made by Bandai. There's a frustrating habit in the hobby, both by the folks who build the kits and the folks selling them, to lump all these kits under "Third Party", "Indie Plamo", or just "ChinaPla" even though not all of the makers are Chinese. I haven't decided on a preferred term, but I'm leaning towards just listing the maker or if I need to refer to a larger whole, "Other Kits" or "Non-Bandai".

Slap Ya Mama Pound cake (This one is delicious)

* 1 pound (4 sticks) unsalted butter, softened
* 2 ½ cups granulated sugar
* 1 teaspoon vanilla extract
* 1 teaspoon almond extract (optional but recommended)
* 8 large eggs
* 3 cups all-purpose flour
* 1 teaspoon baking powder
* ½ teaspoon salt
* 1 cup heavy cream
For the White Glaze
* 1 ½ cups powdered sugar
* 2–3 tablespoons milk or heavy cream
* ½ teaspoon vanilla extract
Instructions
1. Prep: Preheat oven to 325°F (165°C). Grease a 10-inch tube or Bundt pan and lightly dust with flour.
2. Cream: In a large bowl, beat butter and sugar until very light and fluffy (5–7 minutes). Mix in vanilla and almond extract.
3. Add eggs: Beat in the eggs one at a time, scraping the bowl as needed.
4. Dry mix: In a separate bowl, whisk flour, baking powder, and salt.
5. Alternate: Add the dry mixture to the butter mixture in 3 additions, alternating with the milk (start and end with dry). Mix just until smooth—do not overmix.
6. Bake: Transfer batter to the pan, smooth the top, and bake 1 hour 20–30 minutes, or until a toothpick comes out clean.
7. Cool: Let cool in the pan 15–20 minutes, then invert onto a rack.
8. Glaze: Whisk powdered sugar, milk/cream, and vanilla until pourable but not thin. Drizzle over the warm  cake and let set 15–20 minutes before slicing.

24. What are you watching this month that you are enjoying?

I'm watching Will Trent and High Potential on Hulu. And the Rookie. Hulu has a lot of series. They also have movies that we watch now and then.

We watched a movie on HBO called Dead of Winter. If it were any slower, it would have been going backwards. Mind you, we watched the entire thing, but I got so cold watching. It was filmed in Minnesota during winter. I'm originally from Iowa, and I left because it was too cold, and I never looked back. Anyhow, back to the movie, it had Emma Thompson in it. As always, she was excellent. I didn't care for the ending, but life is like that.

Is anyone watching Dark Winds? We love it. It only has 8 episodes for this season. That's not enough. Will Trent will have 18 episodes. That's more like it. Does anyone have any Dark Wind icons? I only have this one? I would love one with Joe (Zahn)

14. What challenges have you overcome in the past? How has doing so made your life more vibrant and full?

When I was 28, I stopped drinking completely. I'm an alcoholic, and it was time. I finally stopped for me, my hubby and our children. I've never done anything that hard as stopping. It wasn't all easy as pie. It was hard work, but I'm happy to be where I am in life. Sober and thrilled with life. I'm blessed.

Enough about that. Too heavy for this time at night. Have a good Tuesday.
